Influence of Cocoa Liquor Origin on Cocoa Butter Composition and Color, Texture, and Rheological Properties of Milk and Dark Chocolates: A Preliminary Study. [PDF]

open access: yesFood Sci Nutr
This study compared cocoa liquors from Ecuador, Ghana, and Côte d'Ivoire and evaluated their effects on the color, textural, and rheological properties of milk and dark chocolates. The results showed that cocoa origin influenced cocoa liquor characteristics and contributed to differences in chocolate quality.

Contrasting Embryogenic Trajectories Reveal Spatial Control as a Key Determinant of Embryogenic Competence in Theobroma cacao L. [PDF]

open access: yesPhysiol Plant
ABSTRACT Somatic embryogenesis (SE) in Theobroma cacao is a micropropagation technique of great importance but remains constrained by genotype recalcitrance. The cellular and molecular mechanisms distinguishing regenerative from non‐regenerative responses remain poorly understood.
