Effects of pH on the stability of cyanidin and cyanidin 3-O-β-glucopyranoside in aqueous solution [PDF]
The colour variation, colour intensity and stability at various pH values (2.0, 4.0, 7.0 and 9.0) of cyanidin 3-O-?-glucopyranoside (Cy3Glc) and its aglycone cyanidin was investigated during a period of 8 hours storage at 25?C. Our data showed that pH of aqueous solution had impact on spectroscopic profile of cyanidin and Cy3Glc.

THERMODYNAMIC AND KINETIC INVESTIGATION OF ANTIRADICAL POTENTIAL OF CYANIDIN [PDF]
In the present paper, M05-2X/6-311+G(d,p) level of theory was used to investigate antiradical activity of cyanidin towards highly damaging radical species (.OH, .OCH3, .OOH and .OOCH3). The applied method successfully reproduces the values of reaction enthalpies (ΔHBDE, ΔHIP, and ΔHPA).

Cyanidins: metabolism and biological properties
Cyanidin and its glycosides belong to the anthocyanins, a widespread class of water-soluble plant compounds that are responsible for the brilliant color (red, orange, blue) of fruits and flowers. Cyanidin 3-Oxalylglucoside in Orchids
Abstract A new acylated anthocyanin has been isolated from flowers of Nigritella and Orchis and identified as cyanidin 3-O-β-(6”-O-oxalyl)-glucoside on the basis of TLC , HPLC , FABMS, 1H and 13C NMR . This pigment was found to be present in various members of the Orchidaceae.

Citrus flavonoid extracts reduced TPO‐ Ab levels in AITDs cell models. PMFs exhibited the strongest effect on alleviating AITDs among citrus flavonoids. Tangeretin modulated IL‐ 17 signaling pathway to prevent AITDs, and reduced NaI‐ induced thyroid damage in AITDs mouse model.
