Measurement of lyophilisation primary drying rates by freeze-drying microscopy

Abstract The mass transfer processes that influence the rate of primary drying during lyophilisation are characterised by freeze-drying microscopy. A simple diffusion model is shown to describe the observed progress of drying fronts through isothermal, one-dimensional systems of slab and cylindrical geometry.

各種の食品乾燥装置を設計し,制御化などを行なっていくためには,簡単な乾燥モデルに基づいた乾燥速度式を設定し,それに含まれる速度パラメータを求めていくことが必要である。 既報7)において,殻状乾燥モデルに基づく乾燥速度式の設定について報告してきた。本報は,均一乾燥モデルに基づく乾燥速度式を設定する研究を行ない,寒天,にんじんならびに炊飯米を例として速度パラメータを算出して,両乾燥モデルの適用性について検討したものである。 均一乾燥モデルに基づく乾燥速度式として,乾燥表面積を簡単な近似式で仮定して表わした場合と,それが未消失含水量のべき乗で関係づけられるとした場合とを仮定した。両者の計算結果はよく似た結果になり,乾燥装置の設計などに対しては簡単なだけ後者が有用と考えられた。乾燥速度は,寒天とにんじんでは,

食品の乾燥は,貯蔵とか輸送を容易にすることから,食糧問題を考えていく場合に重要になる単位操作の一つである。各種の乾燥装置を設計し,制御化などを行なっていくためには,乾燥速度式を設定し,それに含まれる速度パラメータを求めていくことが必要である。 一般に食品において,乾燥特性曲線を描いた場合,恒率および減率期間が明確でないが,この原因として食品に特有の表面収縮現象などが考えられる。また,食品は多種にわたる高分子成分によって構成されていて化学的,物理的な性質が単純でなかったり,細胞構造を有しているものが多いことなどからも,水分移動機構などが複雑である。これらの食品に特有な現象を一つずつ究明しながら乾燥速度式を設定していくべきであるが,再現性のよい実験データを得るのが困難であることなどにより容易でない ...

Limits to the Rate of Drying of Materials

The literature on process drying is dominated by the concern for drying kinetics as a basis for sizing process plants. Yet not always are these kinetics the sole or principal factor in limiting drying. The extent of drying is better described in terms of dimensionless parameters such as the number of transfer units (NTU) or loading ratio.
