Epicatechin attenuates lead (Pb)-induced cognitive impairment in mice: regulation on Nrf2 signaling pathway, and interference on the interaction between Pb with albumin

open access: yesFood Science and Human Wellness
Epicatechin (EC) was used in this study to antagonize the cognitive dysfunction caused by lead (Pb) exposure in mice. Eight-week-old male Kunming mice were treated with PbCl2 (20 mg/kg) and/or EC (50 mg/kg) by gavage administration for 4 weeks.

Integrating Bone‐Brain Axis Modulation and Tea Consumption for Enhancing Neurovascular Resilience and Patient Rehabilitation Education

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
This figure illustrates how tea consumption and exercise metabolites may synergistically support neurovascular protection related to hemorrhagic risk. (A) Pathological mechanisms such as vascular injury, small‐vessel fragility, and impaired cerebral perfusion increase cerebrovascular vulnerability.

Regulation of Quality and Phenolic Metabolism in Apricot Fruit by Postharvest Salicylic Acid and Putrescine Applications

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
This study evaluated the effects of salicylic acid and putrescine (1 mM) treatments on the quality and biochemical properties of apricot fruit during 30 days of cold storage. Although weight loss and decay increased during storage, applications significantly reduced these negative effects.

Roasting‐Like Thermal Reconfiguration of Bioactive and Pigment Profiles in Pistachios From Distinct Geographical Origins

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
Dry roasting‐like treatment (140°C for 45 min) induces a significant compositional reconfiguration of (poly)phenols, pigments, and antioxidant capacity in pistachio kernels, strictly dependent on their geographical origin (Iran, Spain, USA, and Turkey), ultimately enhancing their functional quality.

Comparative Study of Epicatechin–Phenylalanine and Epicatechin–Alanine Interactions Using Quantum Chemistry Methods

open access: yesAsian Journal of Chemical Sciences
Aims: This research aims to analyze the interactions within Epicatechin…Phenylalanine complexes and compare them to those in Epicatechin…Alanine complexes through theoretical chemistry calculations. Methodology: The interactions between Epicatechin and Phenylalanine, an amino acid, are evaluated using theoretical chemistry methods.

Beyond “you are what you eat”: Unlocking gut microbiota‐mediated biotransformation of dietary phytochemicals

open access: yesiMetaOmics, Volume 3, Issue 2, June 2026.
The “efficacy paradox” of phytochemicals, low bioavailability yet significant health benefits, is associated with gut microbiota, which biotransforms dietary precursors into bioactive metabolites, enabling systemic effects. Thus, health outcomes of diet depend not just on intake “the rainbow”, but on gut microbial metabolism, redefining “you are what ...

Concentration and composition of condensed tannins in leaves from fodder trees and shrubs in Pakistan

open access: yesJSFA reports, Volume 6, Issue 6, Page 212-219, June 2026.
Abstract Background The lack of dependable, high‐quality forage and animal feedstuffs in many areas of the world hampers livestock production. In these regions, farmers often rely on native fodder tree and shrub leaves as a forage source for their animals with little or no information available on nutritional factors of these feedstuffs.

Changes in phenolic profile, physicochemical properties and sensory attributes of steamed bread fortified with golden kiwifruit (Actinidia chinensis) flour during processing

open access: yesJournal of the Science of Food and Agriculture, Volume 106, Issue 8, Page 4576-4586, June 2026.
Abstract BACKGROUND Chinese steamed bread (CSB) is a traditional East Asian staple. Its texture and nutrition depend on the gluten and starch content of the wheat flour that it contains. Incorporation of golden kiwifruit, which is rich in dietary fiber, vitamin C, and phenolic antioxidants, offers a novel fortification strategy.
