Challenging genosensors in food samples: The case of gluten determination in highly processed samples

Talanta, 2016
Electrochemical genosensors have undergone an enormous development in the last decades, but only very few have achieved a quantification of target content in highly processed food samples. The detection of allergens, and particularly gluten, is challenging because legislation establishes a threshold of 20 ppm for labeling as gluten-free but most ...

Taxing Highly Processed Foods: Impacts on Obesity and Underweight in Sub-Saharan Africa

2018
The consumption of highly processed food has been singled out as one of the factors responsible for the rapidly increasing obesity prevalence and its associated non-communicable diseases and costs. While obesity prevalence is still comparatively low in the lower income Sub-Saharan Africa (SSA), its development prospects render its markets especially ...

PCR detection of genetically modified maize and soy in mildly and highly processed foods

Food Control, 2013
Regulations for both the labeling and the traceability of GMOs in food and feed chains are coming into force worldwide. Turkey is one of the countries enforcing labeling of food products containing GMOs. For this purpose, reliable and accurate detection methods are a necessity.

A new on-line process rheometer for highly viscous food and animal feed materials

Journal of Food Engineering, 2007
Rheological characterization of food and animal feed materials during manufacture is necessary to optimize processes, also to achieve better quality of products. Existing laboratory instruments measure accurately rheological parameters, but the complex rheological behavior of food/feed materials depends upon time, shear, temperature, pressure and ...

Consumption of highly processed foods: Effects on bioavailability and status of zinc and copper in adolescents

Food Research International, 2012
The effects of consuming diets with different Maillard reaction products (MRP) content on zinc and copper bioavailability and status were examined. In a 2-week randomised 2-period crossover trial, 18 male adolescents consumed two diets, named white diet (WD) and brown diet (BD), which were poor and rich in MRP, respectively.
