Functional and physicochemical properties of proteins isolated from four different pulses

Proteins from four pulses viz. pinto bean, cow pea, pigeon pea, and navy bean were isolated and characterized. Pinto bean protein showed the highest oil absorption capacity and solubility. Pinto bean protein exhibited the highest emulsion capacity and foaming capacity. Cow pea protein showed the highest in vitro protein digestibility.

Hydroxy‐alpha‐sanshool could modulate the expression of appetite‐related factors and the composition of intestinal microbiota in mice fed with a high‐fat diet by regulating food intake and maintaining energy homeostasis, which is consistent with the involvement of the gut‐brain axis in this regulatory mechanism.

Preparation of Antioxidant Peptides Derived From Quinoa Protein and Evaluation of Their Antioxidant Activity Through a D‐Galactose‐Induced Aging Mice Model

Quinoa protein peptides (QPP) were prepared via pepsin hydrolysis and showed strong in vitro antioxidant activity. In D‐galactose‐induced aging mice, QPP alleviated organ damage, enhanced antioxidant enzyme activities, and upregulated hepatic antioxidant gene and protein expression. QPP is a promising natural anti‐aging ingredient for functional foods.
