Anthocyanins of Kidney Beans (Kintoki)

(1) 金時豆の種皮の色素はペーパークロマト法により4種類存在することを認めた。(2) 金時豆を1%塩酸-メタノールで抽出後アンバライトCG-50によるカラムクロマト法, アビセルによるカラムクロマト法, マスペーパークロマト法により4種類の色素を単離した。(3) 得られた各々の結晶について加水分解を行なった結果, 結合糖はいずれもグルコースであり, 色素A, Cのアグリコンはペラルゴニジンで, 色素B, Dのアダリコンはシアニジンであった。(4) 吸収スペクトル, 部分加水分解等により, 色素Aはペラルゴニジン-3-モノグルコサイド, 色素Bはシアニジン-3-モノグルコサイド, 色素Cはペラルゴニジン-3, 5-ジグルコサイド, 色素Dはシアニジン-3, 5-ジダルコサイドであった。
