Preparation and Characterization of Konjac Glucomannan Gel

Rheological properties of mixed gels of konjac glucomannan (KGM) with different molecular weights and kappa-carrageenan (CAR) were studied by a dynamic viscoelastic measurement and a tensile testing. Both storage and loss moduli for sol state mixtures containing higher molecular weight of KGM were higher.

Characterization and property of palmitoylated konjac glucomannan
Wuhan University Journal of Natural Sciences, 1997Various degrees of paimitoylated konjac glucomannan (PKGM) are prepared by heterogeneous method. Differential thermal analysis (DTA) thermographs show PKGM having certain degree of substitution (DS) gave a new crystalline peak at higher temperature. And PKGM having higher DS only shows the new crystalline state.

It is indicated that the acetyl group of the KGM powder could be removed by means of the MC method.
