Probiotic Viability and Bioactive Properties of Buffalo Yoghurt Produced Using High Cholesterol‐Assimilating Probiotic Strains

Buffalo yoghurt samples containing Lpb. plantarum showed the highest probiotic activity. B. lactis increased ACE‐inhibitory activity after gastrointestinal digestion. Cholesterol levels are lower in buffalo yoghurts containing Lpb. plantarum and B. lactis.
