Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, incorporating a sodium caseinate-stabilized emulsion, was prepared using cold-set gelation under acidic conditions without crosslinking agents.

This is the first report in which barley protein nanoparticles were prepared with the aim of developing a delivery system for lipophilic bioactive compounds at ambient temperature using high pressure homogenization.
