Comparison of Flavor Components of Fujian Oolong Teas
Chagyo Kenkyu Hokoku (Tea Research Journal), 1988 6種類の福建省産烏竜茶の香気成分をガスクロマトグラフ及びガスクロマトグラフ－質量分析計で分析し,その中から同定した代表的な30の香気成分を比較した。その結果,福建省の南部の撹拌萎凋と北部の日干萎凋を主体とした製茶法の中の萎凋法の違いにより,各種香気成分の生成量が異なっており,南部福建省で行われている萎凋法の方が,高沸点成分を含む香気の形成には有利であった。同じ茶産地の荒茶と仕上げ茶の間でも,その香気を構成する香気成分に違いが見られ,一級品及び二級品の荒茶の全精油量はそれぞれの仕上げ茶よりも多く,大きな変化が仕上げ工程で起こった。同じ茶生産地に属していても,官能的に違ったグレードに評価された茶はその香気を構成する香気成分に違いがあった。一級品の荒茶及び仕上げ茶は ...
