Metabolism and Toxicity Studies Supporting the Safety of Rebaudioside D

International Journal of Toxicology, 2013
Rebaudioside D (Reb D) is one of the several glycosides found in the leaves of Stevia rebaudiana (Bertoni) Bertoni (Compositae) which has been identified as a potential sweetener. The metabolism of Reb A and Reb D was evaluated in various in vitro matrices (simulated gastrointestinal fluids, rat liver microsomes, and rat cecal contents) and through ...

Rebaudioside A: Two-generation reproductive toxicity study in rats

Food and Chemical Toxicology, 2008
Rebaudioside A was administered via the diet to male and female Han Wistar rats at 0, 7500, 12,500, and 25,000ppm for two generations. Rebaudioside A treatment was not associated with any signs of clinical toxicity or adverse effects on body weight, body weight gain, or food consumption.

Enhancing Rebaudioside M Synthesis via Introducing Sulfur-Mediated Interactions between Glycosyltransferase UGT76G1 and Rebaudioside D

Journal of Agricultural and Food Chemistry
Rebaudioside M (Reb M), a zero-calorie sweetener with high sweetness, faces production challenges due to its low yield and purity. UGT76G1, a uridine diphosphate glucose (UDPG)-dependent glycosyltransferase, forms a β-1,3-glycosidic bond with rebaudioside D (Reb D) to produce Reb M but with an efficiency lower than that for stevioside (ST).
