Release of antidiabetic peptides from Stichopus japonicas by simulated gastrointestinal digestion
Food Chemistry, 2020Sea cucumber (Stichopus japonicus) is a high-protein food with the potential to release certain peptides through enzymolysis. This work is to explore the characteristics of peptides released from Stichopus japonicus protein in the process of digestion. Hydrolysates were obtained by gastrointestinal digestion and fractioned to 30 kDa fractions.

The protein corona (PC), which defines the biological identity of nanoparticles in the blood, is well-known, but no comprehensive and systematic study has been conducted yet on the formation of PCs in the gastrointestinal environment. Thus, this study aimed to explore the interaction between model polystyrene nanoparticles (PS-NPs) of 50-100 nm and ...

Resistance to proteases throughout the gastrointestinal (GI) tract is a prerequisite for milk-derived peptides to exert biological activities. In this work an in vitro multi-step static model to simulate complete digestion of the bovine milk proteins has been developed. The experimental set-up involved the sequential use of: (i) pepsin, (ii) pancreatic

Simulated gastrointestinal digestion of walnut protein yields anti-inflammatory peptides
Food ChemistryThe impact of the simulated gastrointestinal digestion process on walnut protein and the potential anti-inflammatory properties of its metabolites was studied. Structural changes induced by digestion, notably in α-Helix, β-Turn, and Random Coil configurations, were unveiled. Proteins over 10,000 Da significantly decreased by 35.6 %.

The effect of simulated gastrointestinal digestion on shrimp Penaeus vannamei allergenicity
Chinese Journal of Oceanology and Limnology, 2009Pen a 1 is a major shrimp allergen that induces an allergy. The aim of this study is to assess the effect of simulated gastrointestinal fluids on the allergenicity of Pen a 1. Purified Pen a 1 from shrimp (Penaeus vannamei) was subjected to digestion in SGF (simulated gastric fluid) and SIF (simulated intestinal fluid) for a set time. The allergenicity
