Comparative study of soluble soybean polysaccharides on bread staling under acidic conditions
Food Chemistry, 2023Effect of soluble soybean polysaccharides (SSPS) and acidic condition on the bread staling of crumb and crust were evaluated in bread characteristics, water migration, starch retrogradation, and flavor. Bread characteristic analysis showed SSPS and acidic conditions significantly improved bread quality during storage, maintaining crumb softness.

Food Hydrocolloids, 1987Abstract Two polysaccharide fractions were isolated from defatted soy flour, and the viscosity behavior of these fractions was determined. The viscosity of the fraction derived from water-soluble dietary fiber was not strongly dependent upon concentration: the viscosity of 28.6% solution was only 16.3 cp.

Different concentrations [i.e., 0%, 1%, 2%, and 4% (w/w)] of nanorod-rich ZnO (ZnO-nr) were incorporated into soluble soybean polysaccharide (SSPS). The mechanical, thermophysical, antimicrobial, and barrier properties of the resultant bionanocomposite films were evaluated.
