Modification of starch

open access: yesCarbohydrate Polymers, 2020
Starch is a polysaccharide widely present in nature and characterized by a wide range of applications. This often implies the necessity for various novel properties with respect to those of native starch, mainly achievable via chemical modification. During the last decades, products with new or enhanced properties were prepared from starch because of ...

Ionizing and nonionizing radiations can change physicochemical, technofunctional, and nutritional attributes of starch

open access: yesFood Chemistry: X, 2023
Challenges for the food/non-food applications of starch mostly arise from its low stability against severe processing conditions (i.e. elevated temperatures, pH variations, intense shear forces), inordinate retrogradability, as well as restricted ...

Effect of Modification by β-Amylase and α-Glucosidase on the Structural and Physicochemical Properties of Maize Starch

open access: yesFoods
Single enzymatic modifications are limited to starch. Complex modification with synergistic amylases will improve starch properties more significantly. In this study, maize starch was compound modified by β-amylase and α-glucosidase.

Gut microbiome and aging—A dynamic interplay of microbes, metabolites, and the immune system

open access: yesFEBS Letters, EarlyView.
Age‐dependent shifts in microbial communities engender shifts in microbial metabolite profiles. These in turn drive shifts in barrier surface permeability of the gut and brain and induce immune activation. When paired with preexisting age‐related chronic inflammation this increases the risk of neuroinflammation and neurodegenerative diseases.
