Starmerella bacillaris Yeast Derivatives for Improving Wine Stability: Effect of Cell Wall Composition and Extraction Techniques

Yeast derivatives from S. bacillaris showed superior protein haze reduction in wine compared to those from S. cerevisiae, with the most effective results from alkaline extraction.
