低蛋白飼料をラットをこ給与して1日1頭あたりの排糞量を求めて消化性の指標とする簡便法を検討して,サツマイモ澱粉に対する処理の効果を比較した. 生サツマイモ澱粉を与えると激しく下痢し,糞量も多いが,これを熱処理あるいは酸処理すれば,下痢を防ぐことができた.これらの有効な処理方法はいずれも澱粉の構造に変化を及ぼすもので,生サツマイモ澱粉の消化が悪いのに主としてその構造と関係があると考えられる.
