Exploring the Use of Verjuice for Reduced Sodium Pickle Production: Determination of Hedonic and Rejection Thresholds

open access: yesJournal of Sensory Studies, Volume 40, Issue 2, April 2025.
ABSTRACT Food industry has been searching for strategies to reduce sodium in foods. Verjuice, an acidic juice made from thinned grapes, appears to enhance perceived saltiness in pickles. This study aimed to determine the affective thresholds (Consumer Rejection Threshold: CRT, Compromised Acceptance Threshold: CAT, Hedonic Rejection Threshold: HRT) of ...

A high‐resolution model of the grapevine leaf morphospace predicts synthetic leaves

open access: yesPLANTS, PEOPLE, PLANET, Volume 7, Issue 1, Page 133-146, January 2025.
Grapevine leaves are emblematic of the strong visual associations people make with plants. Leaf shape is immediately recognizable at a glance, and therefore, this is used to distinguish grape varieties. In an era of computationally enabled machine learning–derived representations of reality, we can revisit how we view and use the shapes and forms that ...

Stilbene production as part of drought adaptation mechanisms in cultivated grapevine (Vitis vinifera L.) roots modulates antioxidant status

open access: yesPlant Biology, Volume 27, Issue 1, Page 102-115, January 2025.
Root stilbenes serve as valuable markers of drought tolerance in cultivated grapevines, providing new insights for sustainable viticulture. Abstract Stilbenes, naturally occurring polyphenolic secondary metabolites, play a pivotal role in adaptation of various plant species to biotic and abiotic factors.

Cytological characteristic of two strains of grapevine (Vitis riparia × Vitis labrusca) callus culture [PDF]

open access: yesBiologia Plantarum, 1988
The structure of the cells was studied in two strains of grapevine calli (Vitis riparia ×V. labrusca). These callus cultures contained only highly vacuolised cells. The pattern of division in these slightly cytosolic cells was described. In both callus strains caryological instability has been found.
