Contactless Conductivity Detection for Capillary Electrophoresis—Developments From 2020 to 2024

open access: yesELECTROPHORESIS, EarlyView.
ABSTRACT The review covering the development of capillary electrophoresis with capacitively coupled contactless conductivity detection from 2020 to 2024 is the latest in a series going back to 2004. The article considers applications employing conventional capillaries and planar lab‐on‐chip devices as well as fundamental and technical developments of ...

Whey-derived peptides interactions with ACE by molecular docking as a potential predictive tool of natural ACE inhibitors [PDF]

open access: yes, 2020
Several milk/whey derived peptides possess high in vitro angiotensin I-converting enzyme (ACE) inhibitory activity. However, in some cases, poor correlation between the in vitro ACE inhibitory activity and the in vivo antihypertensive activity has been ...

Whey protein: The “whey” forward for treatment of type 2 diabetes?

open access: yesWorld Journal of Diabetes, 2015
A cost-effective nutritional approach to improve postprandial glycaemia is attractive considering the rising burden of diabetes throughout the world. Whey protein, a by-product of the cheese-making process, can be used to manipulate gut function in order to slow gastric emptying and stimulate incretin hormone secretion, thereby attenuating postprandial

Self‐Emulsifying Biocatalysis Based on an Amphipathic Protein BslA‐Modified Esterase Functioning as a Fine‐Tuned System for Oil Hydrolysis

open access: yesFood Bioengineering, EarlyView.
BslA is a promising tool to create an robust self‐emulsifying biocatalysis platform by reducing the droplet sizes of emulsion and improving its stability. It could guarantee the efficient hydrolysis of astaxanthin esters catalyzed by Est3‐14 without extra emusifier, increasing the yield of free astaxanthin to 184 μg·mL−1.

Mastitomics, the integrated omics of bovine milk in an experimental model of Streptococcus uberis mastitis: 2. Label-free relative quantitative proteomics [PDF]

open access: yes, 2016
Mastitis, inflammation of the mammary gland, is the most common and costly disease of dairy cattle in the western world. It is primarily caused by bacteria, with Streptococcus uberis as one of the most prevalent causative agents.

Microencapsulating Properties of Whey Proteins. 2. Combination of Whey Proteins with Carbohydrates

open access: yesJournal of Dairy Science, 1993
Abstract Anhydrous milk fat was effectively microencapsulated by spray drying in wall systems consisting of combinations of whey protein with with carbohydrates lacking surface-active properties. Whey proteins were effective emulsifiers in the presence of these carbohydrates and enabled microencapsulation even at a concentration of 5% (wt/wt ...

Morphological and Textural Properties of Feta Cheese Made of Vegetable Protease

open access: yesFood Bioengineering, EarlyView.
ABSTRACT There is a growing market demand for sustainable and ethical products, that initiated the use of vegetable proteases in food production, including cheese. Feta cheese, traditionally made from animal‐derived rennet, can benefit from the incorporation of vegetable proteases for several reasons, including ethical considerations, allergen ...

At same leucine intake, a whey/plant protein blend is not as effective as whey to initiate a transient post prandial muscle anabolic response during a catabolic state in mini pigs. [PDF]

open access: yesPLoS ONE, 2017
Muscle atrophy has been explained by an anabolic resistance following food intake and an increase of dietary protein intake is recommended. To be optimal, a dietary protein has to be effective not only to initiate but also to prolong a muscle anabolic ...

Biofilm formation by B. licheniformis isolated from whey protein concentrate 80 powder as a potential source of product contamination : a thesis presented in partial fulfilment of the requirements for the degree of Doctor of Philosophy in Food Technology at Massey University, Palmerston North, New Zealand [PDF]

open access: yes, 2018
This study aimed to examine biofilm formation of Bacillus licheniformis isolated from whey protein concentrate 80 (WPC80) as a potential source of contamination in the manufacture of WPC.

Bioactivity in Whey Proteins Influencing Energy Balance [PDF]

open access: yes, 2012
Peer-reviewedObesity develops due to energy (food) intake exceeding energy expenditure. Nutrients that reduce the positive energy balance are thus being considered as therapies to combat obesity.
