The oxidation mechanism of phospholipids in Antarctic krill oil promoted by metal ions

Food Chemistry, 2020
Antarctic krill oil (AKO) is an emerging dietary supplement containing metal ions that influence oil oxidation. Thus, this study focuses on the effect and mechanism of metal ions on phospholipid oxidation in AKO. Firstly, AKO containing Mg2+, Mn2+, Cu2+, Fe2+ and Fe3+ (200 μmol/kg) were prepared separately and incubated at 60 °C for 6 days.

Encapsulation of Antarctic krill oil in yeast cell microcarriers: Evaluation of oxidative stability and in vitro release

Food Chemistry, 2021
Antarctic krill oil (KO) was encapsulated into yeast cells (YCs), and the physicochemical, morphological, and conformational characterizations of KO-loaded YCs (KYCs) were investigated. Moreover, the oxidation stability and in vitro release behavior of KYCs were evaluated.

Mechanism of color change in Antarctic krill oil during storage

Food Chemistry
Antarctic krill oil (AKO) is reddish-orange in color but undergoes changes during storage. To investigate the color deterioration and potential mechanisms involved, the changes in color, endogenous components (astaxanthin, fatty acids, and phospholipids), and reaction products (aldehydes, α-dicarbonyl compounds, and pyrroles) of AKO upon storage were ...

Co‐oxidation of Antarctic krill oil with whey protein and myofibrillar protein in oil‐in‐water emulsions

Journal of Food Science, 2020
Abstract Antarctic krill oil (AKO) is usually encapsulated by the protein materials, enhancing its oxidative stability. Proteins exhibit immense effect on lipid oxidation and induce protein–lipid co‐oxidation. This study aimed at elucidating the co‐oxidation mechanism of AKO and whey protein (WP) or myofibrillar

The complex coacervation of gum Arabic and krill protein isolate and their application for Antarctic krill oil encapsulation

Carbohydrate Polymers
Antarctic krill oil (AKO) possesses potent bioactivities but has limited applications in the food industry due to its poor stability, strong off-flavor, and low bioavailability of contained astaxanthin. In this study, Antarctic krill protein isolate (AKPI) was separated from processing by-product of krill and utilized as a novel wall material via ...

Advances in encapsulation systems of Antarctic krill oil: From extraction to encapsulation, and future direction

Comprehensive Reviews in Food Science and Food Safety
Abstract Antarctic krill oil (AKO) is highly sought after by consumers and the food industry due to its richness in a variety of nutrients and physiological activities. However, current extraction methods are not sufficient to better extract AKO and its nutrients, and AKO is susceptible to lipid oxidation during processing and storage,

Construction of foam-templated Antarctic krill oil oleogel based on pea protein fibril and ι-carrageenan

Carbohydrate Polymers
Edible plant-based oleogels with zero trans-fat are promising solid fat substitutes. In this study, Antarctic krill oil (AKO) oleogels prepared from pea protein fibril (PPF) and ι-carrageenan (CG) by foam-templated method were developed for the first time.

Effective Antarctic krill oil extraction using switchable hydrophilicity solvents

Marine Life Science & Technology, 2020
Antarctic krill has been widely studied because of its abundant biomass, rich nutritional value, and great production potential. Notably, krill oil (KO) is rich in phospholipids (PLs), polyunsaturated fatty acids (PUFAs), and astaxanthin. A method based on a green switchable hydrophilicity solvent N,N-dimethylcyclohexylamine (DMCHA), which can ...

Impact of Antarctic krill oil supplementation on skeletal muscle injury recovery after resistance exercise

European Journal of Nutrition, 2022
Antarctic krill oil (KO) is a natural source of n-3 polyunsaturated fatty acids (n-3 PUFAs), and is rich in phospholipids, Eicosapentaenoic acid (EPA), Docosahexaenoic acid (DHA), astaxanthin, flavonoids, vitamins, trace elements, and other bioactive substances. KO has been confirmed to have anti-inflammatory and immunomodulatory effects.
