Optimization of small-farm postharvest processing of Cacao Nacional in Ecuador

Cacao pods are harvested and beans are extracted for fermentation and drying, which are conducted in the country of origin before export. During these postharvesting processes, essential flavor precursors are developed that later, during thermal treatments such as roasting, transform into the typical cocoa flavor.
