AbstractDuring thermal degradation of anthocyanins, cyanidin‐3‐glucoside, cyanidin‐3‐rutinoside, cyanidin‐3‐sophoroside, at 98 °C in model systems of pH = 1, 2.5 3.5 and 4.5, seven compounds were isolated by means of paper chromatography. Among them quercetin, phloroglucin‐aldehyde and protocatechuic acid were identified.

When the water extracts and acid hydrolysates of five different-colored testae were analyzed by HPLC, chromatograms monitored at 280 nm varied remarkably, whereas two major peaks in the chromatograms monitored at 530 nm were detected only in kernels having completely or partially black color.

C3G and Cy had antioxidative activity in all systems.

2015 IEEE 15th International Conference on Bioinformatics and Bioengineering (BIBE), 2015Cyanidin, as one important plant pigment, was theoretically (at M05-2X/6-311+G(d, p) level of theory) investigated for its ability to scavenge potentially, highly damaging hydroxyl radical. The applied method successfully reproduces the bond dissociation enthalpy (BDE), the ionization potential (IP) and proton affinity (PA).
