Comparison of yield and properties of banana juice extracted by hot water extraction method and different enzymes and preparation of wine from the extracted juices

Banana juice was extracted by using different enzymes at different concentrations. The enzymatically extracted juices were compared among themselves and with hot water extracted juice. Amylase, cellulase, pectinase, and viscozyme were used for enzymatic treatment of banana pulp.
