Sunflower Oil-based Oleogel as Fat Replacer in Croissants: Textural and Sensory Characterisation

open access: yes, 2023
Croissants are made using solid fats that predominantly contain saturated fatty acids and trans fatty acids. In this study, an oleogel consisting of sunflower oil structured with hydroxypropyl methylcellulose was used as a conventional fat replacer in ...

Pain and Patient‐Reported Physical Function Did Not Differ Among Body Composition Profiles in Patients With Hip Osteoarthritis

open access: yesArthritis Care &Research, EarlyView.
Objective To explore whether higher body fat and lower lean mass are associated with greater pain and worse patient‐reported physical function in individuals with hip osteoarthritis (OA). A secondary aim was to examine whether pain and patient‐reported physical function differ according to four body composition profiles: high body fat, low lean mass ...

Effects of fish collagen hydrolysate (FCH) as fat replacer in the production of buffalo patties [PDF]

open access: yes, 2018
Pork and bovine collagen incorporated into meat products showed promising functional properties as food ingredients but has the halal issue. This study investigated the effect of incorporating fish collagen hydrolysate (FCH) as a fat replacer in buffalo ...

Obesity Subtypes and Longitudinal Trajectories of Function Over Seven Years of Follow‐Up: Data From the Multicenter Osteoarthritis Study

open access: yesArthritis Care &Research, EarlyView.
Objective Obesity, defined by body mass index (BMI) ≥30 kg/m2, is a risk factor for functional limitations in people with knee osteoarthritis (OA). However, function varies among such individuals. Our objective was to evaluate the implications of obesity subtypes on longitudinal patterns of physical functioning in people with or at risk for knee OA ...

Effects of energy source on growth and body composition of Holstein calves fed only milk replacer or whole milk

open access: yesJournal of Dairy Science
: Whether lactose or fat is a better fuel for protein synthesis and deposition in young calves has remained controversial. Also, it remains uncertain whether bioactive factors in whole milk might influence growth compared with a milk replacer of similar ...

Artificial Intelligence in Systemic Sclerosis: Clinical Applications, Challenges, and Future Directions

open access: yesArthritis Care &Research, EarlyView.
Systemic sclerosis (SSc) is a rare autoimmune disease defined by immune dysregulation, vasculopathy, and progressive fibrosis of the skin and internal organs. Despite advances in care, major complications such as interstitial lung disease (ILD) and myocardial involvement remain the leading causes of morbidity and mortality.

Laser‐Induced Graphene from Waste Almond Shells

open access: yesAdvanced Functional Materials, EarlyView.
Almond shells, an abundant agricultural by‐product, are repurposed to create a fully bioderived almond shell/chitosan composite (ASC) degradable in soil. ASC is converted into laser‐induced graphene (LIG) by laser scribing and proposed as a substrate for transient electronics.

Functional and pizza bake properties of Mozzarella cheese made with konjac glucomannan as a fat replacer

open access: yes, 2019
Konjac glucomannan (KGM) is a dietary fibre with potential to be used as a fat-replacer in Mozzarella cheese. The functional properties (texture, free oil, meltability and stretch performance) of full-fat cheese control (FFC), low-fat cheese control (LFC)

Microenvironmental Reprogramming by 3D Anisotropic Cardiac Extracellular Matrix Induces Nuclear Remodeling and Epigenetic Maturation of Chemically Induced Cardiomyocytes

open access: yesAdvanced Functional Materials, EarlyView.
A 3D anisotropic hydrogel derived from heart extracellular matrix guides cytoskeletal alignment and nuclear remodeling in reprogrammed cardiomyocyte‐like cells. This study reveals how matrix alignment modulates nuclear envelope dynamics and chromatin state, triggering transcriptional and functional maturation.
