Changes of Bioactive Components and Antioxidant Capacity of Pear Ferment in Simulated Gastrointestinal Digestion In Vitro

open access: yesFoods, 2023
Fruit ferment is rich in polyphenols, organic acids, enzymes, and other bioactive components, which contribute to their antioxidant ability. In this study, we investigated the effect of the simulated gastric and intestinal digestion in vitro on the total

Bioaccessibility evaluation of pharmaceuticals in market fish with in vitro simulated digestion

Journal of Hazardous Materials, 2021
The consumption of pharmaceuticals-contaminated aquatic products could pose risks to human health, and risk assessments considering bioaccessibility can provide better dietary recommendations. In this study, the bioaccessibility of 6 pharmaceuticals (sulfadiazine (SD), sulfapyridine (SPD), roxithromycin (ROX), tylosin (TYL), diclofenac (DIC) and ...

Simulated in vitro digestion of α-lactalbumin modified by phosphorylation: Detection of digestive products and allergenicity

Food Chemistry, 2022
The effects of phosphorylation on the allergenicity of bovine α-lactalbumin (BLA) and digestive products were studied in vitro digestion. Two components with different molecular weight and conformation were obtained from natural and phosphorylated BLA.

The structure of triglycerides impacts the digestibility and bioaccessibility of nutritional lipids during in vitro simulated digestion

Food Chemistry, 2023
The triglyceride (TAG) structure of lipids may affect their nutritional properties by affecting the process of digestion and absorption. In this paper, a mixture of medium-chain triglycerides and long-chain triglycerides (PM) and medium- and long-chain triglycerides (MLCT) were selected to explore the effects of triglyceride structure on in vitro ...

Fungal Digestive Enzymes Promote Macronutrient Hydrolysis in the INFOGEST in vitro Simulation of Digestion

Proceedings of 2022 AOCS Annual Meeting & Expo, 2022
Fungal enzymes are common ingredients in dietary supplements that support digestion. At adequate concentrations, exogenous enzymes may improve digestion by hydrolyzing macronutrients beyond acid-mediated hydrolysis, endogenous gastric pepsin, and pancreatic enzymes alone.

Molecular dynamics simulation and in vitro digestion to examine the impact of theaflavin on the digestibility and structural properties of myosin

International Journal of Biological Macromolecules, 2023
In this study, the interaction mechanism between theaflavin and myosin was explored to confirm the potential application of theaflavin in the meat protein system. A series of theaflavin and myosin solutions were prepared for spectroscopic studies.

Stability of creatine derivatives during simulated digestion in an in vitro model

Food Funct., 2014
Newly developed forms of creatine are often claimed to exhibit improved bioavailability and efficacy. They are of great interest for sports nutrition and therapeutic uses. However, for most newer creatine forms stability after ingestion under physiological conditions is insufficiently documented, relevant data are inconsistent or even missing ...

Validation of a new in vitro dynamic system to simulate infant digestion

Food Chemistry, 2014
Understanding the mechanisms of infant formula disintegration in the infant gastrointestinal tract is a key step for developing new formulas with health benefits for the neonate. For ethical reasons, the access to in vivo data obtained on infants is limited.

Reactivity of Free Malondialdehyde during In Vitro Simulated Gastrointestinal Digestion

Journal of Agricultural and Food Chemistry, 2017
An aqueous buffer, a saturated glycerol triheptanoate oil, and a Tween 20 stabilized fully hydrogenated coconut oil-in-water emulsion, all spiked with malondialdehyde, were subjected to in vitro digestion. A dynamic equilibrium between malondialdehyde, its aldol self-condensation products, and its hydrolytic cleavage products was observed.
