KOMBREAD, Kombucha as a Functional Starter for Sourdough Bread: Physicochemical Properties, Microbiological Characterization, and Quality Evaluation

open access: yesFood Science &Nutrition, Volume 14, Issue 10, October 2026.
Kombucha can be used as a microbial starter to accelerate sourdough fermentation, reducing maturation time from 10–14 days to about 5 days. The resulting bread maintains comparable texture, structure, and sensory qualities to traditional sourdough while offering enhanced functional benefits, including higher phenolic content and antioxidant capacity ...

Ginsenoside Rb1 From the Functional Food Panax ginseng Suppresses Pancreatic Cancer Progression via Macrophage Reprogramming Through the PI3K‐AKT Pathway

open access: yesFood Science &Nutrition, Volume 14, Issue 10, October 2026.
Food‐derived bioactive compound ginsenoside Rb1 (GRB1) inhibits pancreatic cancer progression by reprogramming tumor‐associated macrophages. GRB1 suppresses the PI3K–AKT signaling pathway, thereby blocking M0‐to‐M2 macrophage polarization and reducing the accumulation of immunosuppressive macrophages within the tumor microenvironment.

Chemical Composition and In Vitro Bioactive Potential of Dried Honeybee (Apis mellifera L.) Podmore as a Candidate Functional Food Ingredient

open access: yesFood Science &Nutrition, Volume 14, Issue 10, October 2026.
Dried honeybee podmore was evaluated as a sustainable functional food ingredient. The extract showed high protein, lipids, balanced amino acids, chitin, chitosan, minerals, phenolics, and flavonoids. It exhibited antioxidant activity, inhibited pancreatic lipase and alpha glucosidase, and enhanced insulin secretion in MIN6 beta cells, supporting ...
