A novel biorelevant in vitro dynamic digestion simulator reproducing the biomechanics of the gastrointestinal tract

2022
Background: The biomechanics of the gastrointestinal tract strongly influence food disintegration and digestion in vivo. Most currently available in vitro dynamic digestion models lack, however, the ability of mimicking the oro-gastrointestinal morphology and contractions, possibly overlooking the effect of mechanical forces in the digestive process ...

Changes of Barley Bound Phenolics and Their Characteristics During Simulated Gastrointestinal Digestion and Colonic Fermentation In Vitro

open access: yesFoods
Phenolic compounds in cereals, known for their biological activities, are primarily found in a bound state within the bran. Their changes during digestion are linked to physiological activities. In this study, the dynamic changes and fermentation characteristics of barley bound phenolics (BBPs) were investigated through an in vitro rat gastrointestinal

Comparison of in vitro digestive characteristics of proteins from different sources in simulated elderly gastrointestinal conditions

Food Chemistry
This study aimed to evaluate the impact of in vitro digestive characteristics of five different protein sources (fish, crab, beef, chicken, and soy) in adults and elderly individuals. Simulated gastrointestinal tract degradation in the elderly significantly reduced the digestibility of all proteins.
