Fate of free and modified Alternaria mycotoxins during the production of apple concentrates
Mouldy core is a frequent apple fungal disease, mainly caused by toxigenic Alternaria species. Mouldy core is hardly detected in pre-selection procedures when the apples are destined for industrialization, and to date no information is available on the fate of Alternaria toxins during apple concentrate production.

A Novel Adsorbent Magnetic Graphene Oxide Modified with Chitosan for the Simultaneous Reduction of Mycotoxins [PDF]
A novel magnetic graphene oxide modified with chitosan (MGO-CTS) was synthesised as an adsorbent aimed to examine the simultaneous removal of mycotoxins. The composite was characterised by various procedures, namely Fourier-transform infrared spectroscopy (FTIR), X-ray diffraction (XRD) and a scanning electron microscope (SEM).

Biomonitoring of deoxynivalenol and deoxynivalenol-3-glucoside in human volunteers : renal excretion profiles [PDF]
Biomarkers for the determination of the dietary exposure to deoxynivalenol (DON) have been proposed in the past but so far no quantification of their use in humans has been carried out. Following a human intervention study with two mycotoxins, namely DON

Modified Fusarium Mycotoxins in Cereals and Their Products—Metabolism, Occurrence, and Toxicity: An Updated Review [PDF]
Mycotoxins are secondary fungal metabolites, toxic to humans, animals and plants. Under the influence of various factors, mycotoxins may undergo modifications of their chemical structure. One of the methods of mycotoxin modification is a transformation occurring in plant cells or under the influence of fungal enzymes.

Metabolic profile, bioavailability and toxicokinetics of zearalenone-14-glucoside in rats after oral and intravenous administration by liquid chromatography high-resolution mass spectrometry and tandem mass spectrometry [PDF]
Zearalenone-14-glucoside (ZEN-14G), a key modified mycotoxin, has attracted a great deal of attention due to the possible conversion to its free form of zearalenone (ZEN) exerting toxicity.

Alternaria in food: Ecophysiology, mycotoxin production and toxicology [PDF]
Alternaria species are common saprophytes or pathogens of a wide range of plants pre- and post-harvest. This review considers the relative importance of Alternaria species, their ecology, competitiveness, production of mycotoxins and the prevalence of ...

The mycotoxin alternariol induces DNA damage and modify macrophage phenotype and inflammatory responses [PDF]
Alternariol (AOH), a mycotoxin produced by Alternaria fungi, is frequently found as a contaminant in fruit and grain products. Here we examined if AOH could modify macrophage phenotype and inflammatory responses. In RAW 264.7 mouse macrophages AOH changed the cell morphology of from round to star-shaped cells, with increased levels of CD83, CD86, CD11b,

Electrochemical Aptamer-Based Sensors for Rapid Point-of-Use Monitoring of the Mycotoxin Ochratoxin A Directly in a Food Stream. [PDF]
The ability to measure the concentration of specific small molecules continuously and in real-time in complex sample streams would impact many areas of agriculture, food safety, and food production. Monitoring for mycotoxin taint in real time during food

UPLC-MS/MS analysis of ochratoxin A metabolites produced by Caco-2 and HepG2 cells in a co-culture system [PDF]
Ochatoxin A (OTA) is one of the most important mycotoxins based on its toxicity. The oral route is the main gateway of entry of OTA into the human body, and specialized epithelial cells constitute the first barrier.

Evaluation of nonionic surfactant modified montmorillonite as mycotoxins adsorbent for aflatoxin B1 and zearalenone [PDF]
This work aims at exploring the potential of nonionic surfactant octylphenol polyoxyethylene ether (OP-10) modified montmorillonites (NMts) as mycotoxins adsorbent. The resulting NMts has different structural configurations, organic carbon contents, surface hydrophobicity and textural properties at different surfactant loadings.
