Encapsulated Proanthocyanidins as Novel Ingredients

Proanthocyanidins (OPC) are polyphenolic compounds, derivatives of flavan-3-ol flavonoids. They are abundant in grape seeds and skins, and contribute to most of the polyphenols in red wine.
