Nutritional, Oxidative, and Sensory Quality of Whiteleg (Penaeus vannamei) and Pink Shrimp (Penaeus paulensis) From Different Production Systems During Frozen Storage

open access: yesJournal of Food Science, Volume 91, Issue 6, June 2026.
ABSTRACT This study compared the nutritional composition, fatty acid profile, oxidative stability, and sensory quality of whiteleg shrimp (Penaeus vannamei) and pink shrimp (Penaeus paulensis) obtained from semi‐intensive, organic, and wild systems. Four groups were evaluated: Semi‐intensive P.

Exploring the Antifungal Potential of the Brown Macroalga Hormophysa triquetra: Morphological Disruptions and Structural Changes in Plant Pathogens

open access: yesEnvironmental Microbiology Reports, Volume 18, Issue 3, June 2026.
Extracts of Hormophysa triquetra showed antifungal activity with marked hyphal deformities in Fusarium oxysporum and Alternaria alternata. Light microscopy and SEM confirmed structural alterations despite unchanged radial growth. Cucumber assays validated reduced disease incidence, linked to fatty‐acid–rich metabolites detected by GC–MS.

Assessment of the Biogeography and Molecular Phylogenetics of Sea Cucumbers (Echinodermata: Holothuroidea) in South Africa

open access: yesJournal of Biogeography, Volume 53, Issue 6, June 2026.
ABSTRACT Aim The biogeography and evolution of South African sea cucumbers have been previously explored; however, these aspects lack detailed study. This study (1) explores the biogeography of sea cucumbers along the coastline of South Africa (SA) and (2) presents a preliminary molecular phylogeny based on the mitochondrial 16S marker.

Formulation and Characterization of Fucoidan‐Based Hydrogels for 3D Printing Applications

open access: yesJournal of Food Process Engineering, Volume 49, Issue 6, June 2026.
Algal polysaccharide‐based hydrogels combining fucoidan, sodium alginate, and agar showed suitable rheological and structural properties for extrusion‐based 3D printing. The formulation containing equal concentrations of alginate and agar exhibited superior printability, structural stability, and printing fidelity.

Descriptive Sensory Profiling and Aroma‐Focused Lexicon Development of Commercially Available Korean Soy Sauces

open access: yesJournal of Sensory Studies, Volume 41, Issue 3, June 2026.
ABSTRACT This study aimed to develop an aroma lexicon and to characterize the sensory aroma profiles of commercially available Korean soy sauces according to their commercial categories: Jin‐Ganjang (JG), Yangjo‐Ganjang (YG), and Aged Ganjang (AG). Eleven soy sauce products were evaluated by a highly trained sensory panel using descriptive analysis ...
