Free amino acid composition in the root of Yacon (Smallanthus Sonchifolius)
ヤーコンの栄養的特性の一端を明らかにするため,生産地の異なるヤーコンの遊離アミノ酸を測定し検討した。 ヤーコンは, 水分, タンパク質, 脂質, 炭水化物, 灰分がそれぞれ, 85.9~91.1%, 0.49~0.96%, 0.04~0.13%, 7.9~12.9%, 0.33~0.56%で主要な成分は水分であった。ヤーコンのタンパク質, 脂質含量は, 生産地域によって違いが見られた。 ヤーコンの遊離アミノ酸総量は, 147.9~341.1mg/100gであり生産地域によって差がみられた。主要な遊離アミノ酸は, いずれの生産地域でもアルギニンとグルタミンであった。プロリンは, 1.1~97.4mg/100gで生産地によって含量に大きな違いがみられた。 ヤーコンの遊離アミノ酸は, 根元部 ...
