In Vitro Effects of Stachyose on the Human Gut Microbiota
Starch/Staerke, 2021AbstractGut microbiota plays an important role in human health. Stachyose, an oligosaccharide, modulates the gut microbiota composition in animals. However, the role of stachyose in promoting the proliferation of probiotics and whether it inhibits pathogenic micro‐organisms in human gut microbiota has not been explored.

Stachyose synthase (STS) (EC 2.4.1.67) was purified 313-fold from mature seeds of lentil. The final preparation had a specific activity of 9.09 nkat stachyose formed per milligram of protein. The enzyme was a monomeric protein with a molecular mass of 88.6 kDa (SDS-PAGE) and an isoelectric point of 4.8 (chromatofocusing).

The Proliferation Mechanism of Lactobacillus plantarum RB1 Stimulated by Stachyose
Current Microbiology, 2017The proliferation mechanism of Lactobacillus plantarum RB1 promoted by stachyose was investigated in this work. The hydrolysis of stachyose, the glycometabolism, and the cytoactivity of L. plantarum RB1 were detected after proliferation. The specific activity of α-galactosidase of L.

Raffinose, stachyose and verbascose form the three major members of the raffinose family oligosaccharides (RFO) accumulated during seed development. Raffinose synthase (RS; EC 2.4.1.82) and stachyose synthase (STS; EC 2.4.1.67) have been associated with raffinose and stachyose synthesis, but the precise mechanism for verbascose synthesis is not well ...
