5種類のアズキを用い,餡製造工程において廃液として取り扱われている渋切水と煮熟液中の有効利用の検討を目的にスタキオースの含量を測定するとともに,煮熟液の各種処理による回収率および脱色率を測定した.(1)スタキオース含量は,アズキ中のスタキオース総量の26~49%が煮熟液に溶出されることがわかった.一方,渋切水中のスタキオース含量は,アズキ中のスタキオース総量の2.1~10.1%であった.(2)CaO(CO2飽充)で処理することにより,アズキの煮熟液中のスタキオースを70~80%回収することができ,吸着樹脂HP20を併用することで脱色効果も期待できることがわかった.このように廃水処理されている渋切水および煮熟液中にはスタキオースを含有し,これをCaO(CO2飽充 ...
