Amylose in starch: towards an understanding of biosynthesis, structure and function.

open access: yesNew Phytologist, 2020
Starch granules are composed of two distinct glucose polymers - amylose and amylopectin. Amylose constitutes 5 to 35% of most natural starches and has a major influence over starch properties in foods.

Effect of starch physiology, gelatinization, and retrogradation on the attributes of rice starch-ι-carrageenan film [PDF]

open access: yes, 2017
Edible films and coatings have been applied as the potential substitutes for conventional plastics in food packaging. However, their physical and mechanical properties still have limitations and thus require further improvement.

Functional characteristics and molecular structural modification of plant proteins. Review

open access: yesПищевые системы
Protein preparations from plant raw materials are widely used in the food industry as improvers, replacers or enrichers for products. However, their functional properties, as a rule, are less pronounced than those of proteins of animal origin. The aim of

Potential of the small-granule starch mutation for the Bioethanol Industry. [PDF]

open access: yes, 2012
The industrial starch market is undergoing major expansion, but certain specific industrial uses cannot be satisfied by native starches and, therefore, chemical or physical modification is necessary.

Preparation of N-doped carbon dots based on starch and their application in white LED [PDF]

open access: yes, 2018
N-doped carbon dots (CDs) were synthesized simply and economically by a one-step hydrothermal method using starch as a carbon source and ethylenediamine (EDA) as a nitrogen dopant.

Gut microbiome and aging—A dynamic interplay of microbes, metabolites, and the immune system

open access: yesFEBS Letters, EarlyView.
Age‐dependent shifts in microbial communities engender shifts in microbial metabolite profiles. These in turn drive shifts in barrier surface permeability of the gut and brain and induce immune activation. When paired with preexisting age‐related chronic inflammation this increases the risk of neuroinflammation and neurodegenerative diseases.
