Abstract Goroho banana (Musa acuminafe, sp) is a local banana variety native to North Sulawesi. Flour made from goroho bananas has a high nutritional content, consisting of 75.18% carbohydrates, 5.16% protein, and 0.97% fat. Its starch content reaches 70.78%, with 39.59% amylose and 31.19% amylopectin.
