Staphylococcal enterotoxins (SE) are a family of structurally related proteins that are produced by Staphylococcus aureus. They play a role in the pathogenesis of food poisoning and are the most potent activators of T lymphocytes known. A total of 366 raw milk samples from 30 sheep farms were examined quantitatively for Staphylococcus aureus. Enterotoxin production by strains of Staphylococcus aureus isolated was investigated. S. aureus was detected in 19 farms (63,3%).
