Abstract Galacto‐oligosaccharides (GOS) are prebiotic compounds, widely used as ingredients in various food, nutraceutical and pharmaceutical products. Enzymatic synthesis of GOS results in low‐purity products that contain high amounts of glucose and lactose beside the valuable GOS.
