In vitro Bioaccessibility of Lutein and Zeaxanthin of Yellow Fleshed Boiled Potatoes [PDF]

open access: yesPlant Foods for Human Nutrition, 2013
Yellow fleshed potatoes contain significant amounts of lutein and zeaxanthin but the bioaccessibility of potato carotenoids has not yet been investigated. The purpose of this study was to estimate the in vitro bioaccessibility of carotenoids provided by potato.

EVALUATION OF YELLOW-FLESH POTATO CLONES

open access: yesHortScience, 1993
For the yellow-flesh fresh market, potato clones with intense yellow-flesh and uniform size are desired. Twenty-five yellow-flesh clones were evaluated for individual tuber weight and tuber yellowness as measured by a reflectance colorimeter in replicated field trials in Presque Isle, Maine, in 1991.
