Addition of Instant Shear Heat Milled Pregelatinized Rice Flours on a Gluten‐Free Pizza

A new method of producing pregelatinized flours (AF) was developed, using a Shear Heat Milling Machine (SHMM). SHMM diminishes or even eliminates crystallinity, achieving pregelatinization.
