Influence of cyanidin glycosylation patterns on carboxypyranoanthocyanin formation

Anthocyanins can condense with compounds having enolizable groups to form pyranoanthocyanins. These pigments are less susceptible to degradation and color changes associated with nucleophilic addition common to anthocyanins. This study aimed to evaluate the impact of glycosylation patterns of anthocyanins on carboxypyranoanthocyanin formation.

Cyanidin, as one important plant pigment, was theoretically (at M05-2X/6-311+G(d, p) level of theory) investigated for its ability to scavenge potentially, highly damaging hydroxyl radical. The applied method successfully reproduces the bond dissociation enthalpy (BDE), the ionization potential (IP) and proton affinity (PA).

We determined red fruit anthocyanins, cyanidin-3-glucoside (Cy-g) and cyanidin-3,5-diglucoside (Cy-dg), incorporated into plasma and liver of rats and human plasma by UV-HPLC. Fifteen minutes after an oral supplementation of a mixture of 320 mg of Cy-g and 40 mg of Cy-dg/kg of body weight, rats showed an increase to a maximum of 1563 microg (3490 nmol)
