Bioaccessibility and combined effect in transepithelial transport mechanisms of different dried thinned peach polyphenols

open access: yesFood Chemistry: X
The present study evaluated the bioaccessibility and metabolic transport of different dried thinned peach polyphenols by using in vitro simulated digestion and Caco-2 cells models. Compared to freeze drying (FD) and natural drying (ND), hot air drying at

In vitro gastrointestinal digestion of meat and fish with alcoholic beverages : oxidation and fatty acid ethyl ester formation

open access: yes, 2022
Oxidative reactions during cooking and gastrointestinal digestion of meat and fish lead to the formation of various lipid-and protein oxidation products, some of which are toxic.

Cannabinoid CB1 Receptor in Nociceptors Mediates Postoperative Analgesia via ASIC3 Inhibition

open access: yesAdvanced Science, EarlyView.
CB1R and ASIC3 are co‐expressed in CGRP+ nociceptors of mouse DRG. Plantar incision triggers an upregulation of ASIC3 and activation of ASIC3+ neurons, driving mechanical allodynia. CB1R activation suppresses ASIC3 function and downstream ERK1/2 phosphorylation, thereby braking nociceptive signaling and accelerating pain resolution.

Developing Metal–Polyphenol Network‐Based Single‐Protein Particle Encapsulation System for Sustained Release of Whey Protein to Mitigate Sarcopenia

open access: yesAdvanced Science, EarlyView.
Sarcopenia has emerged as a major health challenge in the aging population. Developing a sustained‐release system for whey protein may enhance its effectiveness in mitigating sarcopenia. Herein, a novel “single‐protein particle encapsulation” (SPPE) system is developed to protect whey protein and control its release.

Oral Recombinant Human Collagen III Protects Gastric Mucosa via G‐Quadruplex‐Mediated Activation of the Pla2g4a‐Prostaglandin Axis

open access: yesAdvanced Science, EarlyView.
Orally administered recombinant human type III collagen protects the gastric mucosa from ethanol‐induced injury by coordinating redox homeostasis, epithelial barrier repair, and arachidonic acid–prostaglandin metabolism. Gastric digestion releases the pentapeptide GPAEF, which interacts with the Pla2g4a promoter G‐quadruplex in a structure‐dependent ...
