Beyaz kiraz meyvesi (Starks gold) polifenol oksidaz enziminin karakterizasyonu
Bu çalışmada, Konya'nın Ereğli ilçesinde yetiştirilen beyaz kirazdan izole edilen ve kısmen saflaştırılan polifenol oksidaz enziminin (PFO) optimum sıcaklık, optimum pH, termal inaktivasyon, kinetik parametreler ve inhibitörlerin etkisi gibi biyokimyasal özellikleri araştırılmıştır. Saflaştırma sonucu iki ayrı aktivite piki elde edilmiştir.
